Dirt Bombs

The compromise between Eric wanting pancakes and me wanting a muffin on Saturday morning. Cake for breakfast! These are excellent. They taste like a sugar-cinnamon cake donut. YUM. The outside had a slight crunch to it too on the first day.

 Cinnamon-Sugar Doughnut Muffins, aka Dirt Bombs
 Recipe from Bon Appetit
 Makes 12

Muffins:
 2 1/4 cups all-purpose flour
2 tsp baking powder
1 tsp  kosher salt
1/2 tsp ground nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
1 large egg
1 cup whole milk

Topping & Assembly:
1/2 cup sugar
1 tsp ground cinnamon
6 TBS (3/4 stick) unsalted butter, melted

Muffins:
 Preheat oven to 375°. Grease a standard 12-cup muffin pan Whisk flour, baking powder, salt, and nutmeg in a medium bowl; set aside. Using an electric mixer, beat butter and sugar in a large bowl until light and fluffy, about 4 minutes. Beat in egg. With mixer on low speed, add dry ingredients in 3 additions alternating with milk in 2 additions, beginning and ending with dry ingredients. Divide batter among muffin cups and bake, rotating pan halfway through, until a tester inserted into center comes out clean, 30–35 minutes. Let cool 5 minutes in pan, then transfer to a wire rack.

 Topping & Assembly:
 Mix sugar and cinnamon in a medium bowl. Working one at a time, dip tops of muffins in melted butter, then cinnamon sugar.

Pet Peeves



This morning I realized how much I really, truly hate when you cut a sandwich in half and everything oozes out the sides. I use toothpicks to try and hold everything together, but the avocado, tomato bits and condiments are always going to end up more on my hands than on the sandwich. It's stupid how much this bothers me.

I did a google search to see if there's something out there like a bagel slicer that holds your sandwich in place while slicing. Someone actually tried to get a patent for their idea, but it doesn't look it went very far.....ha.

Who doesn't want their sandwich cut in half though?
